Asian Peanut Coconut Dressing

Silky, nutty, and kissed with spice, this Asian-style peanut coconut dressing is a game-changer for your salads, noodle bowls, wraps, or even as a dip. It blends creamy coconut yogurt with peanut butter, chili sauce, and lime for a bold, rich flavor that’s impossible to resist.

Ingredients
  

  • 1 5.3 oz container plain coconut yogurt
  • 1/3 cup creamy peanut butter
  • 2 tbsp sweet chili sauce adjust to taste
  • 2 tsp red curry paste
  • 1 tbsp lime juice fresh
  • 1 tbsp sugar or maple syrup
  • 2 tbsp low sodium soy sauce
  • 3 tbsp rice vinegar
  • 1 garlic clove
  • 1/4 cup fresh cilantro loosely packed
  • 3 –4 tbsp milk to thin
  • 1/8 tsp ground ginger optional

Instructions
 

Blend All Ingredients:

  • In a blender or food processor, combine all ingredients. Blend until smooth.

Adjust Consistency:

  • Add milk a tablespoon at a time to reach desired thickness.

Chill and Store:

  • Chill before serving. Store leftovers in a sealed container in the fridge for up to 7 days.

Notes

  • Use almond or cashew butter for a different twist.
  • Want a dipping sauce? Keep it thick and serve with skewers or spring rolls.
