- 1 large sweet potato cut into ¾-inch chunks
- 2 teaspoons olive oil
- Sea salt and black pepper to taste
- 6 slices turkey bacon chopped
- ½ pound ground beef 85% lean
- 1 small onion chopped
- ½ cup mushrooms chopped
- 2 handfuls fresh spinach roughly chopped
- 4 large eggs

Roast the Sweet Potatoes
Preheat oven to 425°F and line a baking sheet.
Toss sweet potatoes with olive oil, salt, and pepper.
Spread in a single layer and roast for about 35 minutes until tender and crispy.
Build the Base
Add onions and cook until soft.
Stir in ground beef and mushrooms.
Cook until beef is browned and mushrooms are tender.
Add Eggs
Reduce oven temperature to 400°F.
Make 4 small wells in the mixture.
Crack an egg into each well and season lightly.
