This turkey bacon burger and fries breakfast bake is a hearty, protein-packed dish made with roasted sweet potatoes, seasoned ground beef, and perfectly baked eggs. It’s a wholesome, Paleo and Whole30-friendly meal that works for breakfast, brunch, or even dinner.

Ingredients

  • 1 large sweet potato cut into ¾-inch chunks
  • 2 teaspoons olive oil
  • Sea salt and black pepper to taste
  • 6 slices turkey bacon chopped
  • ½ pound ground beef 85% lean
  • 1 small onion chopped
  • ½ cup mushrooms chopped
  • 2 handfuls fresh spinach roughly chopped
  • 4 large eggs

Garnish (Optional)

  • Chopped scallions or chives

Instructions

Roast the Sweet Potatoes

  • Preheat oven to 425°F and line a baking sheet.
  • Toss sweet potatoes with olive oil, salt, and pepper.
  • Spread in a single layer and roast for about 35 minutes until tender and crispy.

Cook the Turkey Bacon

  • Heat an oven-safe skillet over medium heat.
  • Add turkey bacon and cook until partially crispy.

Build the Base

  • Add onions and cook until soft.
  • Stir in ground beef and mushrooms.
  • Cook until beef is browned and mushrooms are tender.

Add Spinach and Potatoes

  • Stir in spinach until wilted.
  • Add roasted sweet potatoes and gently mix.

Add Eggs

  • Reduce oven temperature to 400°F.
  • Make 4 small wells in the mixture.
  • Crack an egg into each well and season lightly.

Bake

  • Transfer skillet to oven and bake for 10–15 minutes until eggs are set to your liking.

Serve

  • Garnish with scallions or chives and serve warm.

Notes

Crispier potatoes: Avoid overcrowding the baking sheet.
Egg preference: Bake less time for runny yolks, longer for firm.
Make ahead: Prepare everything except eggs, then bake with eggs before serving.
Extra veggies: Add bell peppers or zucchini for variation.
Storage: Refrigerate leftovers for up to 3 days.
