Ingredients

  • 2 small or 1 large chicken breasts, cut into 1-inch cubes
  • 1 cup broccoli florets
  • 1 cup bell peppers any color, sliced or chopped
  • 1 small zucchini sliced
  • 1/2 cup tomatoes chopped or whole grape tomatoes
  • 1/2 cup onion sliced or chopped
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 teaspoon paprika optional
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F.
  • Combine all ingredients in a large bowl or zip-top bag.
  • Mix until chicken and vegetables are fully coated in seasoning and oil.
  • Cut two 12x12-inch squares of aluminum foil and place on a baking sheet.
  • Divide the mixture evenly between the two foil squares.
  • Fold the foil over the ingredients, sealing the edges tightly.
  • Bake for 20 minutes or until chicken is fully cooked.
