Ingredients

For the Filling:

  • 1 tablespoon butter
  • 3 oz cream cheese softened
  • 3 tablespoons mayo
  • ¼ cup buffalo sauce
  • ½ teaspoon salt
  • 1 cup cooked and shredded chicken
  • 2 oz crumbled blue cheese
  • 2 green onions chopped

For the Bombs:

  • 1 can 12 oz Pillsbury Homestyle Butter Tastin’ refrigerated biscuits
  • 2 oz fresh mozzarella chopped

Instructions

  • Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Make the Filling: In a medium skillet, melt butter over medium heat. Stir in cream cheese, mayo, buffalo sauce, and salt. Mix until smooth and creamy.
  • Add Chicken and Cheese: Fold in shredded chicken, blue cheese, and chopped green onions. Stir to combine, then remove from heat.
  • Prepare the Dough: Open the biscuit can and separate the biscuits. Flatten each one into a small circle.
  • Assemble the Bombs: Spoon about 1 tablespoon of filling into the center of each dough round, add a small cube of mozzarella, and pinch the edges to seal.
  • Bake: Place sealed-side down on the prepared baking sheet. Bake for 12–15 minutes or until golden brown.
  • Serve Warm: Let cool slightly before serving. Serve with ranch or blue cheese dressing for dipping.

Notes

  • Use rotisserie chicken to save time — it’s tender and perfectly shredded.
  • Seal the edges tightly to keep the filling from leaking out during baking.
  • For extra crispiness, brush the tops with melted butter before baking.
