Servings: 10
For the Filling:
- 1 tablespoon butter
- 3 oz cream cheese softened
- 3 tablespoons mayo
- ¼ cup buffalo sauce
- ½ teaspoon salt
- 1 cup cooked and shredded chicken
- 2 oz crumbled blue cheese
- 2 green onions chopped
For the Bombs:
- 1 can 12 oz Pillsbury Homestyle Butter Tastin’ refrigerated biscuits
- 2 oz fresh mozzarella chopped
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Make the Filling: In a medium skillet, melt butter over medium heat. Stir in cream cheese, mayo, buffalo sauce, and salt. Mix until smooth and creamy.
- Add Chicken and Cheese: Fold in shredded chicken, blue cheese, and chopped green onions. Stir to combine, then remove from heat.
- Prepare the Dough: Open the biscuit can and separate the biscuits. Flatten each one into a small circle.
- Assemble the Bombs: Spoon about 1 tablespoon of filling into the center of each dough round, add a small cube of mozzarella, and pinch the edges to seal.
- Bake: Place sealed-side down on the prepared baking sheet. Bake for 12–15 minutes or until golden brown.
- Serve Warm: Let cool slightly before serving. Serve with ranch or blue cheese dressing for dipping.
-
Use rotisserie chicken to save time — it’s tender and perfectly shredded.
-
Seal the edges tightly to keep the filling from leaking out during baking.
-
For extra crispiness, brush the tops with melted butter before baking.
-
Add spice! For extra heat, drizzle with more buffalo sauce before serving.
-
Freeze leftovers and reheat in the oven for quick snacks later.
