- 1 cup granulated sugar
- ½ teaspoon salt
- 1 box 10 packets Spiced Apple Cider Instant Drink Mix (such as Alpine)
- 2 eggs
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- Caramel candies soft, unwrapped
Prepare the Dough
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, cream together butter, sugar, and salt until light and fluffy.
Add the apple cider drink mix packets and continue mixing until fully incorporated.
Beat in the eggs one at a time, followed by the vanilla extract.
Add the Dry Ingredients
In a separate bowl, whisk together flour, baking soda, baking powder, and cinnamon.
Gradually add dry ingredients to the wet mixture, mixing just until combined.
Chill the dough in the refrigerator for 30 minutes — this helps it firm up for easier shaping.
Shape the Cookies
Scoop about 1½ tablespoons of dough and flatten it slightly in your hand.
Place one soft caramel candy in the center and roll the dough around it, sealing the edges completely.
Place on the prepared baking sheet, spacing each cookie about 2 inches apart.
Bake
Bake for 12–14 minutes, or until the edges are lightly golden.
