- 1.5 lbs boneless skinless chicken thighs
- 3 carrots peeled and sliced
- 3 celery stalks sliced
- 1 small yellow onion diced
- 3 garlic cloves minced
- 6 cups low sodium chicken broth
- 1 tsp salt or to taste
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1/2 tsp dried parsley
- 1 bay leaf
- Optional: 1 cup egg noodles or cooked rice add in last 15-20 minutes
Add chicken, carrots, celery, onion, garlic, broth, and seasonings to crockpot.
