Instructions

Prepare the Almond Crumble

  • Combine Ingredients: In a medium bowl, mix the crushed graham crackers, chopped almonds, melted butter, and sugar until combined.
  • Set Aside: Divide the crumble evenly into the bottom of 6 parfait glasses or jars. Press gently to create a base.

Make the Cheesecake Layer

  • Mix Cream Cheese and Sugar: In a large mixing bowl, beat the softened cream cheese, powdered sugar, almond extract, and vanilla extract until smooth and creamy.
  • Fold in Whipped Cream: Gently fold in the whipped cream until well incorporated.
  • Add to Glasses: Spoon or pipe the cheesecake mixture over the almond crumble layer.

Prepare the Chocolate Ganache

  • Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  • Add Chocolate: Remove from heat and pour over the chocolate chips. Let sit for 2-3 minutes, then stir until smooth.
  • Add Ganache Layer: Spoon a layer of chocolate ganache over the cheesecake layer in each glass.

Assemble and Chill

  • Repeat Layers (Optional): For extra layers, repeat the almond crumble, cheesecake, and ganache layers.
  • Chill: Refrigerate the parfaits for at least 1 hour to allow the flavors to meld.

Garnish and Serve

  • Top with Whipped Cream: Before serving, add a dollop of whipped cream on top of each parfait.
  • Garnish: Sprinkle sliced almonds for garnish.

Notes

  • Chill Before Serving: Let the parfaits chill for at least an hour for best results. The flavors develop and the layers set beautifully.
  • Add Extra Crunch: Toast the almonds before adding them to the crumble for a deeper, nuttier flavor.
  • Make It Lighter: Swap cream cheese for Greek yogurt for a lighter version without sacrificing flavor.
  • Storage: Store parfaits in the refrigerator for up to 3 days. Cover with plastic wrap to maintain freshness.
  • Add a Fruity Twist: Layer in fresh raspberries, strawberries, or blueberries for a pop of freshness.
