Cook frozen tortellini according to package directions.
In a large pan, saute onion in olive oil until tender. Then add garlic, spinach, and tomatoes.
Sprinkle with salt and pepper to taste.
Cook over medium heat for a couple of minutes until liquid is absorbed.
Stir in the whipping cream and cheese and bring to a boil.
Reduce heat and simmer, uncovered, about 10 minutes or until the cream sauce is thickened.
Drain tortellini and mix into the creamed spinach.
Sprinkle each serving with extra Parmesan cheese.
