Creamy and Cheesy Spinach Tortellini - It’s creamy, cheesy, and delicious!

Ingredients
  

  • 1 16 oz. package frozen cheese tortellini
  • 1 small onion chopped
  • 2 tablespoons olive oil
  • 1 garlic clove minced
  • 1 can diced tomatoes with basil garlic, and oregano, undrained
  • 1 10 oz. package frozen chopped spinach, thawed and dried
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions
 

  • Cook frozen tortellini according to package directions.
  • In a large pan, saute onion in olive oil until tender. Then add garlic, spinach, and tomatoes.
  • Sprinkle with salt and pepper to taste.
  • Cook over medium heat for a couple of minutes until liquid is absorbed.
  • Stir in the whipping cream and cheese and bring to a boil.
  • Reduce heat and simmer, uncovered, about 10 minutes or until the cream sauce is thickened.
  • Drain tortellini and mix into the creamed spinach.
  • Sprinkle each serving with extra Parmesan cheese.
