- 3 large sweet potatoes peeled and cut into thin batons
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons chopped fresh parsley for garnish
Preheat oven to 400°F (200°C).
Line a large baking tray with parchment paper.
Toss sweet potato batons in a large bowl with olive oil, paprika, salt, and black pepper until evenly coated.
Spread fries on the baking tray in a single layer, ensuring they don’t overlap.
