Easy One-Pan Crispy Paleo Bacon Wrapped Chicken (Whole30)
When you are looking for a high-protein, low-carb dinner that feels like a decadent treat, this Crispy Paleo Bacon Wrapped Chicken is the ultimate solution. This recipe turns simple boneless skinless chicken thighs into savory, bite-sized parcels of joy by wrapping them in nitrate-free turkey bacon. By seasoning the poultry with a smoky blend of onion powder and paprika before searing it in a cast iron skillet, you create a deep flavor profile that is both rustic and refined. It is a brilliant "one-pan wonder" that transitions seamlessly from the stovetop to the oven, ensuring the chicken stays succulent while the bacon reaches peak crispiness.

Servings: 5
- 1.5 lbs Boneless Skinless Chicken Thighs approx. 5 thighs, cut in half
- 10 slices Nitrate-Free Sugar-Free Turkey Bacon (or Pork Bacon for Paleo)
- 2 tsp Onion Powder
- 1/2 tsp Smoked Paprika
- 1/2 tsp Fine Grain Sea Salt
- To taste Black Pepper
- Fresh Herbs: Sage Thyme, and Rosemary (for garnish)
Preparation: Preheat your oven to 400°F (200°C). In a small bowl, whisk together the onion powder, smoked paprika, salt, and black pepper.
Season: Lay the halved chicken thighs out and sprinkle the spice blend evenly over all sides of the meat.
Wrap: Take one slice of bacon and wrap it tightly around each chicken piece. Aim to wrap it twice so the surface of the chicken is as covered as possible.
Sear: Heat a large cast iron skillet over medium-high heat. Place the chicken pieces in the hot skillet, seam side up. Let the bottom brown for about 2 minutes.
Flip & Bake: Carefully flip each piece so the seam side is now down (this helps seal it) and the browned side is up.
Oven Roast: Transfer the skillet directly into the preheated oven. Bake for 10–15 minutes or until the chicken is no longer pink and the internal temperature reaches 165°F.
Optional Broil: If you want the bacon even crispier, turn on the broiler for 1–2 minutes. Watch it very closely to prevent burning!
Garnish: Remove from the oven and scatter fresh herbs over the pan while the chicken is still sizzling. Serve immediately.
-
Seam Side Secret: Always start with the bacon seam facing up in the pan, then flip it down for the oven. The weight of the chicken "pins" the bacon so it doesn't unravel.
-
Bacon Type: If you are not doing a strict Whole30, regular nitrate-free pork bacon works beautifully and will be even crispier than turkey bacon.
-
Skillet Choice: A cast iron skillet is highly recommended for the best sear, but any heavy oven-safe skillet will work.
-
Crowded Pan: Do not overcrowd the skillet. If the pieces are too close, the bacon will steam rather than crisp. Use two pans if necessary.
