Ingredients

  • 2 large sweet potatoes cut into wedges or strips
  • 5 tablespoons olive oil plus 2 tablespoons later
  • 5 –6 cloves garlic minced
  • teaspoons sea salt
  • Fresh cracked black pepper to taste
  • Zest of 2 limes
  • Juice of 1 lemon

Garnish

  • Whole garlic cloves optional
  • Lime slices optional
  • Fresh parsley chopped

Instructions

Prep

  • Preheat oven to 350°F.
  • Line a baking sheet with parchment paper.

Season the Fries

  • Place sweet potatoes on the baking sheet.
  • Drizzle with 5 tablespoons olive oil.
  • Add garlic, lime zest, salt, and pepper.
  • Toss well and spread in a single layer.

First Bake

  • Bake for 20 minutes.

Add More Oil

  • Remove from oven and drizzle with remaining 2 tablespoons olive oil.

Continue Baking

  • Return to oven and bake for 50 minutes.
  • Flip fries halfway through for even cooking.

Final Bake

  • Remove any garlic pieces or lime slices to prevent burning.
  • Bake for an additional 20 minutes until crispy and golden.

Finish and Serve

  • Drizzle with lemon juice.
  • Garnish with parsley and serve warm.

Cut evenly: Uniform sizes help fries cook evenly.
Don’t overcrowd: Spread fries out for better crisping.
Extra crisp: Use a wire rack on the baking sheet if available.
