For the Chicken Marinade:
- 1.5 lbs boneless skinless chicken thighs or breasts
- 1/3 cup plain Greek yogurt
- 2 tbsp olive oil
- 3 tbsp lemon juice
- 3 garlic cloves minced
- 1 tbsp red wine vinegar
- 1 tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cup cucumber grated and squeezed dry
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove minced
- 1 tbsp fresh dill or 1 tsp dried
- Salt to taste
For Serving:
- 4 pita breads or flatbreads
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup thinly sliced red onion
- Optional: feta cheese olives
In a bowl, combine all marinade ingredients. Add chicken and toss to coat. Cover and marinate in the fridge for at least 1 hour (or overnight).
While chicken marinates, make the tzatziki by combining all sauce ingredients. Chill until ready to serve.
Preheat grill or grill pan over medium-high heat. Grill chicken for 5–7 minutes per side, until golden and cooked through.
Let chicken rest for 5 minutes, then slice into strips.
Warm pita bread on the grill or in a skillet.
To assemble gyros, layer pita with lettuce, tomatoes, onion, chicken slices, and a generous dollop of tzatziki.
Add optional feta or olives as desired.
Wrap or fold, and serve immediately.
