Ingredients
  

For the Hamburger Patties:

  • 2 lbs ground chuck 80/20
  • 1/2 cup seasoned breadcrumbs
  • 2 tsp dry mustard
  • 1 beef bouillon cube finely crumbled
  • 2 tsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil for frying

For the Onion Gravy:

  • 2 onions thinly sliced
  • 1 tbsp garlic minced
  • 2 tbsp all-purpose flour
  • 2 tsp Worcestershire sauce
  • 1 tbsp ketchup
  • 1 tsp browning sauce like Kitchen Bouquet
  • 2 –3 cups beef broth start with 2 cups, add more if needed

Instructions
 

  • In a large bowl, combine all patty ingredients and mix until just combined. Form into 8 thin patties.
  • Heat vegetable oil in a skillet over medium-high heat. Fry patties until browned on both sides (work in batches if needed). Remove and set aside.
  • Reserve about 2 tbsp of oil in the pan. Add sliced onions and cook until soft and caramelized, about 10–12 minutes.
  • Add garlic and cook for 1 more minute.
  • Sprinkle flour over onions, stir constantly for 1 minute until lightly browned.
  • Slowly whisk in 2 cups of beef broth, Worcestershire, ketchup, and browning sauce. Stir and simmer until slightly thickened.
  • Return patties to skillet, spoon gravy over top, cover, and simmer on low for 20 minutes. Add more broth if needed to keep gravy loose.
  • Serve hot with mashed potatoes, rice, or vegetables.

Notes

  • For extra-tender patties, don’t overmix the meat.
  • Let the onion caramelize low and slow for best flavor.
  • Add more broth as needed during simmering to keep the gravy luscious.
