Ingredients
  

  • 12 lasagna noodles cooked and drained
  • 10 ounces fresh spinach chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup part-skim ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese plus extra for topping
  • 1 large egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil or parsley for garnish

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  • Sauté Spinach: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the chopped spinach and cook for 2-3 minutes until wilted. Remove from heat and let cool.
  • Prepare the Filling: In a large bowl, combine the ricotta cheese, Parmesan cheese, 1/2 cup shredded mozzarella, egg, Italian seasoning, salt, and pepper. Add the sautéed spinach and mix until well combined.
  • Assemble the Rolls: Lay the cooked lasagna noodles flat on a clean surface. Spread 2-3 tablespoons of the spinach-ricotta mixture evenly over each noodle.
  • Roll the Noodles: Carefully roll each noodle tightly and place seam-side down in the prepared baking dish.
  • Add Marinara Sauce: Pour the marinara sauce evenly over the lasagna rolls, ensuring all rolls are covered.
  • Top with Cheese: Sprinkle additional mozzarella cheese over the top for a gooey, cheesy finish.
  • Bake: Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  • Garnish and Serve: Garnish with fresh basil or parsley and serve hot.
  • Enjoy: Serve with a side salad and garlic bread for a complete meal.
