Homemade Peanut Butter Cups

Homemade Peanut Butter Cups - Peanut Butter Cups are rich, fudgy and incredibly easy to make... with only 2 ingredients.

Ingredients
  

  • 1/2 cup creamy peanut butter
  • 1 1/2 cups semi-sweet chocolate chips divided
  • seas salt optional
  • sprinkles nonpareils, optional

Instructions
 

  • Line a mini muffin pan with paper liners.
  • Melt half the chocolate chips in the microwave in 30 second intervals until melted. You can also use a double boiler.
  • Fill the bottom of each liner with the melted chocolate - just enough to cover it, about 1 teaspoon. Put the muffin pan into your fridge for 30 minutes or until chocolate is set.
  • While the chocolate finishes cooling, melt the remaining chocolate chips and set aside.
  • Take the muffin pan out of the fridge and place a dollop of peanut butter (about 1/2 teaspoon) in the center of each chocolate bottom; try to avoid touching the side of the liners.
  • Spoon the melted chocolate over the peanut butter - enough to cover the top and fill the cracks. Top with sprinkles of your choice or sea salt.

Notes

Peanut Butter Cups will keep up to 3 days or 4 weeks in the freezer.
