Ingredients

  • Butter for greasing the pan
  • 2 pounds russet potatoes peeled and sliced into half-moons
  • ¼ cup olive oil divided
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning crushed
  • ¼ cup grated Parmesan cheese divided
  • Salt and black pepper to taste
  • Red pepper flakes optional
  • Fresh parsley chopped (for garnish)

Instructions

Prep the Oven and Potatoes

  • Preheat oven to 400°F and generously grease a baking dish with butter.
  • Place sliced potatoes in a large bowl.

Season the Potatoes

  • Drizzle with 2 tablespoons olive oil and toss to coat.
  • Add garlic, Italian seasoning, salt, pepper, and half of the Parmesan.
  • Toss until evenly coated.

First Bake

  • Transfer potatoes to the baking dish in an even layer.
  • Sprinkle a little extra Parmesan on top and drizzle with a bit more oil.
  • Bake for 30 minutes.

Toss and Finish Baking

  • Remove from oven and toss the potatoes well.
  • Sprinkle remaining Parmesan over the top and drizzle with remaining oil.
  • Return to oven and bake for another 25 minutes until golden and crispy.

Serve

  • Toss once more and adjust seasoning if needed.
  • Garnish with fresh parsley and serve warm.
