Ingredients
  

Lime layer:

  • 2 14 oz cans sweetened condensed milk
  • 4 oz cream cheese softened
  • ¾ cup fresh key lime juice or regular lime juice
  • Zest of 2 limes or 4 key limes

Crust:

  • cups graham cracker crumbs about 12 full sheets
  • 1/3 cup granulated sugar
  • 6 Tbsp melted unsalted butter

Optional garnish: dollop of whipped cream and lime zest

Instructions
 

  • Preheat the oven to 350°F and line an 8×8" baking pan with parchment paper (or lightly grease it).
  • In a bowl, stir together graham cracker crumbs, granulated sugar, and melted butter until mixture resembles damp sand. Press evenly into the bottom of the prepared pan and bake for 10 minutes. Remove from oven and allow to cool.
  • Meanwhile, in a separate bowl, beat softened cream cheese until smooth. Gradually whisk in sweetened condensed milk until creamy, then stir in lime zest. Slowly pour in lime juice and mix until fully incorporated.
  • Pour the lime filling over the cooled crust and return to the oven for 10–15 minutes, until the edges are set and the center still has a gentle jiggle.
  • Remove from oven and let cool to room temperature before transferring to the refrigerator. Chill for at least 2 hours—or preferably overnight—for the best texture and clean slicing.
  • Slice into bars, optionally top with whipped cream and lime zest, and serve chilled.

Notes

  • Use a sharp knife warmed under hot water and wiped clean between cuts for perfect edges.
  • Press crust firmly but not overly compacted—to avoid a dense base and preserve a crumbly texture.
  • Chill overnight when possible; this enhances structure and intensifies flavor.
  • Substitute regular limes when key limes aren’t available—the flavor remains delightfully bright.
  • For extra richness, add 2 egg yolks to the lime layer—whisk thoroughly before adding lime juice for a creamier texture and richer color.
