Ingredients
  

For the Mashed Potatoes:

  • 4 lbs russet potatoes peeled and cubed
  • 1/2 cup unsalted butter
  • 1 cup sour cream
  • 1/2 cup whole milk more if needed
  • 1 tsp garlic powder
  • Salt and pepper to taste

For the Casserole:

  • 1 1/2 cups shredded cheddar cheese divided
  • 1/2 cup cooked bacon crumbled
  • 1/3 cup green onions chopped
  • 1/2 cup parmesan cheese optional for extra flavor
  • 1/4 cup breadcrumbs optional for a crispy topping

Instructions
 

Step 1: Boil and Mash the Potatoes

  • Boil Potatoes: Place the cubed potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes or until the potatoes are fork-tender.
  • Drain and Mash: Drain the potatoes and return them to the pot. Add the butter, sour cream, and milk. Mash until smooth and creamy. Add garlic powder, salt, and pepper to taste. If the mixture is too thick, add more milk, a little at a time.

Step 2: Preheat and Prepare

  • Preheat Oven: Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Mix in Add-Ins: Stir in 1 cup of shredded cheddar cheese, crumbled bacon, and half of the green onions into the mashed potatoes.

Step 3: Assemble the Casserole

  • Spread the Mixture: Spread the mashed potato mixture evenly in the prepared baking dish.
  • Add Toppings: Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. For extra flavor, sprinkle parmesan cheese and breadcrumbs on top.

Step 4: Bake

  • Bake the Casserole: Bake for 20-25 minutes or until the cheese is melted and bubbly, and the top is lightly golden.
  • Garnish and Serve: Remove from the oven and garnish with the remaining green onions. Serve hot and enjoy!

  • Use Yukon Gold potatoes for a creamier texture if preferred.
  • For an extra crispy topping, broil the casserole for 2-3 minutes at the end of baking.
