These Low-Carb Reuben Roll Ups deliver all the flavors of the classic Reuben sandwich in a keto-friendly, bread-free format. Made with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing, these roll ups are quick to prepare, full of flavor, and perfect as an appetizer or light meal. Ingredients
  

  • 8 slices corned beef or pastrami
  • 8 slices Swiss cheese
  • 1/2 cup sauerkraut drained and patted dry
  • 1/4 cup Thousand Island dressing
  • 1 tablespoon Dijon mustard optional
  • 1/2 teaspoon caraway seeds optional for extra flavor
  • Toothpicks for securing

Instructions
 

  • Preheat Oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Assemble Roll Ups: Lay out the slices of corned beef on a flat surface. Place a slice of Swiss cheese on top of each slice of beef.
  • Add Sauerkraut and Dressing: Add about 1 tablespoon of sauerkraut on top of the cheese. Drizzle a small amount of Thousand Island dressing over the sauerkraut. If using Dijon mustard or caraway seeds, add them now for extra flavor.
  • Roll and Secure: Carefully roll up each slice tightly and secure with a toothpick to hold the roll in place.
  • Bake: Place the roll ups on the prepared baking sheet. Bake for 5 minutes, or until the cheese is melted and the roll ups are heated through.
  • Serve: Remove from the oven and let cool slightly before serving. Enjoy warm with extra Thousand Island dressing on the side for dipping.
