Maple, Brown Sugar and Cinnamon Overnight Oats

Ingredients
  

  • 2 cups rolled oats gluten-free if needed
  • 2 cups almond milk or milk of choice
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar
  • 3 tablespoons pure maple syrup
  • 3/4 teaspoon ground cinnamon
  • 1/4 cup chopped pecans toasted

Instructions
 

  • In four 8-ounce mason jars or containers, divide the oats and almond milk evenly (1/2 cup oats and 1/2 cup milk per jar). Stir in 1/4 teaspoon vanilla per jar.
  • In a small bowl, mix together brown sugar, maple syrup, and cinnamon.
  • Pour one-quarter of the sweetener mixture into each jar. Stir gently to combine all ingredients.
  • Cover jars and refrigerate for at least 2 hours, ideally overnight.
  • Just before serving, toast chopped pecans at 325°F (160°C) for 5–7 minutes or until fragrant.
  • Sprinkle pecans over each jar just before eating. Add extra maple syrup or cinnamon if desired.

Notes

  • Add chia seeds for extra fiber and creaminess.
  • Substitute the pecans with walnuts, almonds, or pumpkin seeds.
  • For more protein, stir in yogurt or protein powder before chilling.
  • Make it extra decadent by topping with banana slices or a dollop of nut butter.
  • These oats last up to 5 days in the fridge.
