Maple, Brown Sugar and Cinnamon Overnight Oats

- 2 cups rolled oats gluten-free if needed
- 2 cups almond milk or milk of choice
- 1 teaspoon vanilla extract
- 3 tablespoons brown sugar
- 3 tablespoons pure maple syrup
- 3/4 teaspoon ground cinnamon
- 1/4 cup chopped pecans toasted
In four 8-ounce mason jars or containers, divide the oats and almond milk evenly (1/2 cup oats and 1/2 cup milk per jar). Stir in 1/4 teaspoon vanilla per jar.
In a small bowl, mix together brown sugar, maple syrup, and cinnamon.
Pour one-quarter of the sweetener mixture into each jar. Stir gently to combine all ingredients.
Cover jars and refrigerate for at least 2 hours, ideally overnight.
Just before serving, toast chopped pecans at 325°F (160°C) for 5–7 minutes or until fragrant.
Sprinkle pecans over each jar just before eating. Add extra maple syrup or cinnamon if desired.
