For the crust:
- 2 cups chocolate sandwich cookie crumbs about 24 cookies
- 5 tablespoons unsalted butter melted
For the mousse filling:
- 1 1/4 cups heavy cream cold
- 1 cup semi-sweet chocolate chips or chopped chocolate
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
For the topping:
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- Chocolate shavings or curls optional
Make the crust: In a bowl, mix chocolate cookie crumbs and melted butter until fully combined. Press mixture into the bottom and up the sides of a 9-inch pie dish. Chill in the fridge while you prepare the filling.
Prepare the mousse: Melt chocolate in a heat-safe bowl using a microwave in 30-second increments or over a double boiler, stirring until smooth. Let it cool to room temperature.
