Ingredients
  

For the crust:

  • 2 cups chocolate sandwich cookie crumbs about 24 cookies
  • 5 tablespoons unsalted butter melted

For the mousse filling:

  • 1 1/4 cups heavy cream cold
  • 1 cup semi-sweet chocolate chips or chopped chocolate
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup heavy cream
  • 1 tablespoon powdered sugar
  • Chocolate shavings or curls optional

Instructions
 

  • Make the crust: In a bowl, mix chocolate cookie crumbs and melted butter until fully combined. Press mixture into the bottom and up the sides of a 9-inch pie dish. Chill in the fridge while you prepare the filling.
  • Prepare the mousse: Melt chocolate in a heat-safe bowl using a microwave in 30-second increments or over a double boiler, stirring until smooth. Let it cool to room temperature.
  • In a separate bowl, whip 1 1/4 cups of cold heavy cream with powdered sugar and vanilla until medium peaks form.
  • Gently fold the whipped cream into the cooled melted chocolate in batches, being careful not to deflate the mixture.
  • Spoon the mousse into the chilled crust and smooth the top with a spatula. Refrigerate for at least 4 hours, or until set.
  • Top the pie: Just before serving, whip the remaining 1 cup of cream with 1 tablespoon powdered sugar until soft peaks form. Spread or pipe over the mousse.
  • Garnish with chocolate shavings or curls if desired. Slice and serve chilled.

Notes

  • Make sure your melted chocolate has cooled before folding in the whipped cream to prevent curdling.
  • Use a clean, dry bowl for whipping cream to help it whip up faster.
  • This pie keeps well for 3–4 days in the fridge—just cover loosely with plastic wrap.
