Ingredients
  

  • 1 lb baby potatoes halved
  • 1 lb asparagus trimmed and cut into 2-inch pieces
  • 12 oz beef or turkey sausage sliced into 1-inch chunks
  • 4 garlic cloves minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: fresh parsley or grated parmesan for garnish

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  • In a large bowl, toss halved potatoes with olive oil, garlic, paprika, thyme, salt, and pepper. Spread them evenly on the baking sheet. Roast for 20 minutes.
  • Remove from oven and add sausage pieces to the pan. Toss everything together and return to oven for 10 minutes.
  • Add asparagus to the pan, toss lightly, and roast for another 10-12 minutes until vegetables are tender and sausage is browned.
  • Remove from oven and garnish with fresh parsley or grated parmesan if desired. Serve hot.

  • For extra crispiness, don't overcrowd the pan.
  • Use pre-cooked sausage for faster cooking and easier prep.
  • Swap asparagus for green beans or zucchini based on season and preference.
