Servings: 4
- 1 pound fresh green beans trimmed
- 1 egg
- 2 tablespoons olive oil plus 1 tablespoon for pan
- ¼ cup almond flour
- ¼ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- ½ teaspoon paprika
- Black pepper to taste
Prep the Oven
Preheat oven to 425°F.
Line baking sheets with foil and drizzle with olive oil.
Coat the Green Beans
In a bowl, whisk egg with olive oil.
Add green beans and toss to coat evenly.
Add the Coating
In another bowl, mix almond flour, Parmesan, garlic powder, salt, paprika, and pepper.
Toss green beans in the dry mixture until well coated.
Bake
Spread green beans in a single layer on prepared pans.
Bake for 15–20 minutes until golden and crisp.
Optional: Broil for 2–3 minutes for extra crispiness.
Don’t overcrowd: Space beans out so they crisp instead of steam.
Extra crunch: Broil briefly at the end for crisp edges.
Dipping ideas: Serve with ranch, garlic aioli, or spicy mayo.
Make it dairy-free: Skip Parmesan and add extra seasoning.
Storage: Best eaten fresh, but can be reheated in oven for crispness.
