Ingredients

  • 2 pounds Yukon gold potatoes halved or quartered
  • 3 tablespoons olive oil
  • cup shredded Parmesan cheese real Parmesan
  • 1 tablespoon chopped fresh rosemary and thyme
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder

Instructions

Prep the Oven and Potatoes

  • Preheat oven to 375°F.
  • Wash and cut potatoes into evenly sized pieces.

Season the Potatoes

  • In a large bowl, toss potatoes with olive oil until well coated.
  • In a small bowl, mix Parmesan cheese, herbs, salt, and garlic powder.
  • Sprinkle the seasoning mixture over the potatoes and toss again to coat evenly.

Roast

  • Spread potatoes in a single layer on a baking sheet.
  • Sprinkle any remaining seasoning over the top.
  • Roast for 20–30 minutes, or until potatoes are tender and golden brown.

Notes

Crispier potatoes: For extra crispiness, roast at a slightly higher temperature (400°F) and flip halfway through.
