Bake the Potatoes

Wash potatoes, poke holes with a fork, and brush lightly with coconut oil.
Bake for about 40 minutes, or until tender.
Prepare the Skins
Let potatoes cool for about 10 minutes.
Cut each potato in half lengthwise and scoop out most of the inside, leaving a sturdy shell.
Crisp the Skins
Brush both sides of the potato skins with coconut oil.
Place them cut-side down on the baking sheet and bake for 7 minutes.
Flip and bake for another 5 minutes until slightly crisp.
Add Toppings
Fill each potato skin with pizza sauce.
Add cooked sausage, mushrooms, olives, and roasted garlic if using.
Sprinkle with pizza seasoning or oregano.
Top with pepperoni slices.
Crispier skins: Bake a few extra minutes before adding toppings for extra crunch.
Cheese option: If not strictly paleo, add mozzarella for a classic pizza feel.
Topping ideas: Try bell peppers, onions, or jalapeños for extra flavor.
Make ahead: Bake and scoop potatoes in advance, then add toppings and finish baking when ready.
Use leftovers: The scooped potato can be used for mashed potatoes or another dish.
