Ingredients

  • 4 russet potatoes
  • 1 pound ground Italian sausage cooked
  • 8 tablespoons pizza sauce
  • 30 slices pepperoni
  • 8 oz sautéed mushrooms optional
  • Black olives optional
  • Roasted garlic optional
  • Coconut oil for brushing
  • Pizza seasoning or dried oregano
  • Additional favorite pizza toppings optional

Instructions

Bake the Potatoes

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Wash potatoes, poke holes with a fork, and brush lightly with coconut oil.
  • Bake for about 40 minutes, or until tender.

Prepare the Skins

  • Let potatoes cool for about 10 minutes.
  • Cut each potato in half lengthwise and scoop out most of the inside, leaving a sturdy shell.

Crisp the Skins

  • Brush both sides of the potato skins with coconut oil.
  • Place them cut-side down on the baking sheet and bake for 7 minutes.
  • Flip and bake for another 5 minutes until slightly crisp.

Add Toppings

  • Fill each potato skin with pizza sauce.
  • Add cooked sausage, mushrooms, olives, and roasted garlic if using.
  • Sprinkle with pizza seasoning or oregano.
  • Top with pepperoni slices.

Final Bake

  • Bake for 10–12 minutes, until toppings are heated through and pepperoni is slightly crispy.

Serve

  • Serve hot and enjoy immediately.

Crispier skins: Bake a few extra minutes before adding toppings for extra crunch.
Cheese option: If not strictly paleo, add mozzarella for a classic pizza feel.
