Ingredients
  

For the Salmon Burgers:

  • 1 lb fresh salmon filet skin removed, finely chopped
  • 1 cup fresh breadcrumbs
  • ¼ cup chopped cilantro
  • 1 egg
  • ¼ cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Olive oil for greasing the pan

For the Avocado Salsa:

  • 1 large avocado chopped
  • cup chopped red onion
  • ¼ cup chopped cilantro
  • Juice of 1 lime
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the salmon mixture: Chop the salmon into very small pieces (¼-inch chunks) and transfer to a mixing bowl. Add breadcrumbs, egg, mayo, lemon juice, mustard, cilantro, salt, and pepper. Mix gently.
  • Form patties: Divide the mixture into 6 equal parts. Form into burger-shaped patties, about ½ inch thick. Let rest for 5–10 minutes to firm up.
  • Make the salsa: In a bowl, gently combine chopped avocado, red onion, cilantro, lime juice, olive oil, salt, and pepper. Set aside.
  • Cook the burgers: Heat a grill pan or skillet with a little olive oil over medium heat. Cook patties 4–5 minutes per side until browned and cooked through.
  • Serve: Top each burger with a generous spoonful of avocado salsa. Serve in buns, lettuce wraps, or on a plate with salad.

Notes

  • Chill formed patties before cooking for better hold.
  • For extra citrus flavor, zest the lemon before juicing.
  • Add sliced tomatoes or mixed greens for added texture.
  • Use gluten-free breadcrumbs if desired.
  • Patties can be made ahead and refrigerated for 1 day before cooking.
