For the Salmon Burgers:
- 1 lb fresh salmon filet skin removed, finely chopped
- 1 cup fresh breadcrumbs
- ¼ cup chopped cilantro
- 1 egg
- ¼ cup mayonnaise
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Olive oil for greasing the pan
For the Avocado Salsa:
- 1 large avocado chopped
- ⅓ cup chopped red onion
- ¼ cup chopped cilantro
- Juice of 1 lime
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Prepare the salmon mixture: Chop the salmon into very small pieces (¼-inch chunks) and transfer to a mixing bowl. Add breadcrumbs, egg, mayo, lemon juice, mustard, cilantro, salt, and pepper. Mix gently.
Form patties: Divide the mixture into 6 equal parts. Form into burger-shaped patties, about ½ inch thick. Let rest for 5–10 minutes to firm up.
Make the salsa: In a bowl, gently combine chopped avocado, red onion, cilantro, lime juice, olive oil, salt, and pepper. Set aside.
Cook the burgers: Heat a grill pan or skillet with a little olive oil over medium heat. Cook patties 4–5 minutes per side until browned and cooked through.
Serve: Top each burger with a generous spoonful of avocado salsa. Serve in buns, lettuce wraps, or on a plate with salad.
