Ingredients
  

  • 2 1/2 lbs boneless skinless chicken breasts
  • 1 medium onion thinly sliced
  • 1/2 teaspoon garlic powder
  • 2 teaspoons Italian seasoning or mix of oregano, basil, thyme, and rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup balsamic vinegar
  • 1/2 cup low-sodium chicken broth
  • Optional garnish: chopped fresh parsley

Instructions
 

  • Place the sliced onions at the bottom of the slow cooker.
  • Layer chicken breasts on top and season with salt, pepper, garlic powder, and Italian seasoning.
  • Pour balsamic vinegar and chicken broth evenly over the chicken.
  • Cover and cook on LOW for 6 hours or HIGH for 3 hours until chicken is tender.
  • Once cooked, shred or slice the chicken as desired.
  • Stir the sauce and onions well, then return sliced chicken to the pot to soak up flavor.
  • Serve hot, garnished with fresh parsley.

Notes

  • For extra richness, add a tablespoon of butter at the end of cooking.
  • This pairs beautifully with mashed potatoes, quinoa, or a crusty baguette.
  • Want a thicker sauce? Mix 1 tablespoon cornstarch with 2 tablespoons water and stir into the hot sauce.
