Ingredients

Soup Base:

  • 1 medium onion diced
  • 3 stalks celery diced
  • 3 medium carrots peeled and diced
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 1 cup water
  • pounds boneless chicken breast

Seasoning & Flavor:

  • 2 bay leaves
  • 1 teaspoon Italian seasoning or more to taste
  • Salt and freshly ground black pepper to taste

Finish & Garnish:

  • 2 cups cheese tortellini fresh or refrigerated
  • Fresh parsley chopped (for garnish)

Instructions

  • Prepare the base: Add onion, celery, carrots, garlic, chicken broth, water, and chicken breasts to the slow cooker.
  • Season the soup: Stir in Italian seasoning, bay leaves, salt, and black pepper. Mix gently to combine.
  • Cook: Cover and cook on low for 5–6 hours or until the chicken is tender and fully cooked.
  • Shred the chicken: Remove chicken breasts, shred them using two forks, then return to the slow cooker.
  • Add tortellini: Stir in cheese tortellini and cook on high for 20–30 minutes until tortellini are tender.
  • Serve: Remove bay leaves. Ladle soup into bowls, sprinkle with fresh parsley, and serve warm.
