Ingredients

  • 2 sweet potatoes scrubbed and sliced into ¼–½ inch rounds
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt plus ¼ teaspoon (divided)
  • ¾ teaspoon black pepper
  • cup shredded sharp cheddar cheese 2%
  • 2 medium avocados peeled and diced
  • 2 tablespoons plain Greek yogurt non-fat or 2%
  • 1 tablespoon fresh lime juice
  • ½ teaspoon smoked paprika
  • 3 ounces turkey bacon about 4 slices
  • 3 tablespoons fresh cilantro chopped

Instructions

Roast the Sweet Potatoes

  • Preheat oven to 425°F and line two baking sheets with foil.
  • Brush each sheet lightly with olive oil.
  • Arrange sweet potato slices in a single layer.
  • Brush tops with remaining olive oil and season with 1 teaspoon salt and black pepper.
  • Roast for 20–25 minutes, flipping halfway through, until golden and tender.

Add Cheese

  • Remove from oven, sprinkle cheddar cheese over each slice.
  • Return to oven and bake for 3 minutes until cheese is melted.

Make the Avocado Topping

  • In a bowl, combine avocado, Greek yogurt, lime juice, remaining salt, and smoked paprika.
  • Mash lightly, keeping the mixture slightly chunky.

Cook the Turkey Bacon

  • In a skillet over medium heat, cook turkey bacon until crispy.
  • Transfer to paper towels, then chop into small pieces.

Assemble

  • Top each sweet potato slice with a spoonful of avocado mixture.
  • Sprinkle with chopped turkey bacon and fresh cilantro.

Serve

  • Serve warm or at room temperature.

Even slicing: Use a mandoline for uniform slices and even cooking.
