Taco Shepherd's Pie

This taco shepherd’s pie is a flavorful twist on a classic comfort dish. It layers seasoned ground beef with smoky spices, vegetables, and creamy mashed potatoes, all topped with melted cheese. It’s hearty, satisfying, and brings together the best of Tex-Mex and traditional comfort food in one dish.

Ingredients

  • 4 cups potatoes about 5 large, peeled and chopped
  • 1 –2 tablespoons butter or dairy-free alternative
  • 1 tablespoon olive oil
  • 1 lb extra lean ground beef
  • 1 onion finely chopped
  • 12 oz frozen fire-roasted corn
  • 6 oz frozen peas or carrots
  • 1 cup shredded cheddar cheese

Taco Seasoning Mix

  • 2 tablespoons cumin powder
  • 1 tablespoon chili powder
  • 1 teaspoon ancho chili powder
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon oregano

Instructions

Cook the Potatoes

  • Preheat oven to 350°F.
  • Boil peeled and chopped potatoes in salted water for 10–20 minutes until tender.
  • Drain and mash with butter until smooth. Set aside.

Prepare the Filling

  • Heat olive oil in a skillet over medium-high heat.
  • Add ground beef and chopped onion, cooking until browned.
  • Stir in taco seasoning and mix well.

Add Vegetables

  • Add corn and peas or carrots to the skillet.
  • Cook for a few minutes until heated through.

Assemble

  • Transfer meat mixture to an 8×8 baking dish.
  • Spread mashed potatoes evenly over the top.
  • Sprinkle shredded cheese on top.

Bake

  • Bake for 25–35 minutes until heated through and lightly golden on top.

Serve

  • Let cool slightly, then serve warm.

Notes

Extra flavor: Add a spoonful of salsa to the meat mixture.
Creamier potatoes: Mix in a splash of milk or cream when mashing.
Spice level: Adjust chili powder to your taste.
Make ahead: Assemble ahead and bake when ready.
Leftovers: Store in the fridge for up to 3 days and reheat in the oven.
