- 4 cups potatoes about 5 large, peeled and chopped
- 1 –2 tablespoons butter or dairy-free alternative
- 1 tablespoon olive oil
- 1 lb extra lean ground beef
- 1 onion finely chopped
- 12 oz frozen fire-roasted corn
- 6 oz frozen peas or carrots
- 1 cup shredded cheddar cheese
Taco Seasoning Mix
- 2 tablespoons cumin powder
- 1 tablespoon chili powder
- 1 teaspoon ancho chili powder
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- 1 teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon paprika
- ¼ teaspoon oregano
Prepare the Filling
Heat olive oil in a skillet over medium-high heat.
Add ground beef and chopped onion, cooking until browned.
Stir in taco seasoning and mix well.
Assemble
Transfer meat mixture to an 8×8 baking dish.
