Ingredients

  • 8 ounces pasta rotini, spaghetti, ziti, or your favorite
  • 2 tablespoons olive oil
  • 1.25 pounds boneless skinless chicken breasts thinly sliced
  • Salt and pepper to season chicken
  • 1 14.5 oz can petite diced tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon pepper or to taste
  • 1/2 teaspoon salt optional and to taste
  • About 4 ounces mozzarella cheese shredded or sliced; fresh mozzarella works beautifully
  • 1/4 to 1/3 cup fresh basil leaves loosely packed and chopped

Instructions

Cook the Pasta:

  • Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente. Drain and set aside.

Cook the Chicken:

  • In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook for 4–6 minutes per side, until golden brown and cooked through. Remove chicken and set aside.

Prepare the Sauce:

  • In the same skillet, add diced tomatoes, oregano, and a pinch of salt and pepper. Stir and let simmer for 5–7 minutes, allowing flavors to meld and sauce to thicken slightly.

Combine Chicken and Sauce:

  • Return the chicken to the skillet, coating each piece with the tomato mixture. Reduce heat to low.

Add Cheese and Basil:

  • Top the chicken with mozzarella slices or shredded cheese. Cover and let sit for 2–3 minutes, until cheese is melted and bubbly. Sprinkle with chopped fresh basil before serving.

Serve:

  • Serve the chicken and sauce over cooked pasta. Drizzle with extra olive oil and garnish with more basil if desired.
