Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 small cabbage chopped
  • 2 cans 14.5 oz each diced tomatoes
  • 1 can 8 oz tomato sauce
  • ½ cup chicken broth
  • 1 cup precooked brown rice
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 –2 teaspoons sea salt

Instructions

Cook the Beef and Aromatics

  • Heat olive oil in a large skillet or pot over medium heat.
  • Add ground beef and onion, cooking until beef is browned and onion is soft.
  • Add garlic and cook for 1 minute until fragrant.

Build the Base

  • Add chopped cabbage, diced tomatoes, tomato sauce, and chicken broth.
  • Stir to combine and bring to a boil.

Simmer

  • Reduce heat, cover, and simmer for 15–20 minutes until cabbage is tender.

Add Rice and Finish

  • Stir in precooked rice, garlic powder, salt, and pepper.
  • Cover and cook for another 10 minutes to blend flavors.

Serve

  • Taste and adjust seasoning as needed.
  • Serve warm.

Notes

Make it lighter: Use ground turkey instead of beef.
Extra flavor: Add a splash of Worcestershire sauce for depth.
Rice option: Use cauliflower rice for a low-carb version.
