These Whole30 sloppy joe bowls are a wholesome twist on the classic sandwich, featuring savory ground beef in a rich, slightly sweet tomato sauce served over fluffy baked potatoes. Naturally sweetened with dates and packed with bold flavor, this dish is hearty, satisfying, and perfect for a clean, comforting meal.

Ingredients

  • 1 lb ground beef
  • 1 8 oz can tomato sauce
  • 1 tablespoon tomato paste
  • ½ cup chopped onion
  • ¾ cup chopped green pepper
  • tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • ½ teaspoon minced garlic
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • 5 Medjool dates pitted
  • cup water reserved
  • Russet potatoes 1 per person
  • Green onions for garnish

Instructions

Cook the Beef and Vegetables

  • In a large pan over medium-high heat, cook ground beef until browned.
  • Add chopped onion and cook until softened.
  • Drain excess grease if needed.

Build the Flavor

  • Reduce heat to medium.
  • Add green pepper, apple cider vinegar, Dijon mustard, garlic, parsley, and salt.
  • Stir and cook for a few minutes until fragrant.

Prepare the Sauce

  • In a small pot, bring water to a boil and add the dates.
  • Boil for 30–60 seconds until softened, then remove (reserve the water).
  • Blend dates with tomato sauce and tomato paste until smooth.

Combine

  • Pour the blended sauce into the beef mixture.
  • Add about 2 tablespoons of the reserved date water.
  • Stir and simmer for a few minutes until thickened.

Cook the Potatoes

  • Wash and dry potatoes, then poke with a fork several times.
  • Microwave for 5–7 minutes until soft inside (or bake if preferred).

Assemble and Serve

  • Split open each potato and spoon the sloppy joe mixture over the top.
  • Garnish with chopped green onions and serve warm.

Notes

Sweeter sauce: Add an extra date if you prefer a sweeter flavor.
Texture option: Leave the sauce slightly chunky or blend longer for a smoother consistency.
Potato alternative: Serve over roasted sweet potatoes or cauliflower rice for variety.
