Ingredients

  • 2 cups creamy peanut butter
  • 3/4 cup salted butter softened
  • 1/2 teaspoon vanilla extract
  • 3 3/4 cups powdered sugar adjust as needed
  • 2 pounds chocolate candy coating

Instructions

  • In a large bowl, mix together the peanut butter, softened butter, and vanilla extract until smooth.
  • Gradually add the powdered sugar, mixing a little at a time until the mixture becomes thick and holds together in a soft dough.
  • Cover the mixture and refrigerate for 15–25 minutes until it firms up.
  • Scoop and roll the dough into 1-inch balls and place them on a lined tray.
  • Refrigerate the rolled balls for another 15–20 minutes to firm them further.
  • Melt the chocolate coating according to package directions until smooth.
  • Dip each peanut butter ball into the melted chocolate, letting the excess drip off.
  • Place the coated balls onto wax paper or parchment paper.
  • Allow the chocolate to set completely at room temperature or in the refrigerator.
  • Chill before serving or storing for best texture.

Notes

If the mixture is too soft, add a bit more powdered sugar.
If it’s too firm, mix in a small amount of peanut butter.
Use a fork or dipping tool to make coating easier and cleaner.
Work in batches to keep the peanut butter balls cold while dipping.
Add a drizzle of white or milk chocolate on top for decoration.
Store in the refrigerator for up to 1 week or freeze for longer storage.
Let sit at room temperature for a few minutes before serving for the best texture.
