- 1 lb ground beef
- 1/2 onion finely chopped
- 2 cloves garlic minced
- 3 cups peeled and diced potatoes
- 1 cup shredded carrots optional
- 3 cups chicken broth
- 1 tsp dried basil
- 1 tsp parsley
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 1/4 cup butter
- 2 cups shredded cheddar cheese
- 1 1/2 cups whole milk or half-and-half
- 1/4 cup sour cream optional
In a skillet, brown the ground beef over medium heat. Drain fat.
Transfer beef to the crock pot. Add onion, garlic, potatoes, carrots, broth, basil, parsley, salt, and pepper.
Cover and cook on LOW for 6 hours or HIGH for 3 hours, until potatoes are tender.
About 30 minutes before serving, melt butter in a saucepan and whisk in flour to make a roux. Cook for 1–2 minutes.
Gradually whisk in milk and cook until thickened. Add cheese and stir until melted.
Pour cheese mixture into the crock pot. Stir well to combine.
Stir in sour cream (if using), adjust seasoning, and cook for another 10–15 minutes.
Serve hot with desired toppings.
