Ingredients
  

  • 1 lb ground beef
  • 1/2 onion finely chopped
  • 2 cloves garlic minced
  • 3 cups peeled and diced potatoes
  • 1 cup shredded carrots optional
  • 3 cups chicken broth
  • 1 tsp dried basil
  • 1 tsp parsley
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups whole milk or half-and-half
  • 1/4 cup sour cream optional

Instructions
 

  • In a skillet, brown the ground beef over medium heat. Drain fat.
  • Transfer beef to the crock pot. Add onion, garlic, potatoes, carrots, broth, basil, parsley, salt, and pepper.
  • Cover and cook on LOW for 6 hours or HIGH for 3 hours, until potatoes are tender.
  • About 30 minutes before serving, melt butter in a saucepan and whisk in flour to make a roux. Cook for 1–2 minutes.
  • Gradually whisk in milk and cook until thickened. Add cheese and stir until melted.
  • Pour cheese mixture into the crock pot. Stir well to combine.
  • Stir in sour cream (if using), adjust seasoning, and cook for another 10–15 minutes.
  • Serve hot with desired toppings.

  • For extra richness, use half-and-half instead of milk.
  • Add chopped pickles or bacon for cheeseburger-style toppings.
