- 8 oz 250g mascarpone cheese
- 3 large eggs separated
- ½ cup caster sugar superfine sugar
- ½ teaspoon vanilla extract
- 1¼ cups strong hot espresso coffee
- 2 tablespoons liqueur of choice optional – Kahlúa or Frangelico recommended
- 6.5 oz 200g ladyfingers (savoiardi biscuits, about 24–30 pieces)
- Cocoa powder for dusting
Prepare the espresso: Brew strong espresso and pour it into a shallow dish. Stir in the liqueur (if using) and set aside to cool slightly.
Make the mascarpone cream: In a mixing bowl, beat the egg yolks and half the sugar together until pale and creamy. Add the mascarpone cheese and vanilla extract, then whisk until smooth and fully incorporated.
Whip the egg whites: In a separate clean bowl, beat the egg whites with the remaining sugar until stiff peaks form.
Combine the mixtures: Gently fold the whipped egg whites into the mascarpone mixture in two additions, being careful not to deflate the airy texture.
Assemble the tiramisu: Quickly dip each ladyfinger into the espresso (1 second per side) and arrange in a single layer at the bottom of your serving dish.
Spread half of the mascarpone cream evenly over the first layer of soaked biscuits.
Repeat with another layer of dipped ladyfingers, then top with the remaining mascarpone cream.
Smooth the top and refrigerate for at least 4–6 hours, or overnight for best results.
Before serving, dust generously with unsweetened cocoa powder using a fine sieve.
