Ingredients

  • 8 oz 250g mascarpone cheese
  • 3 large eggs separated
  • ½ cup caster sugar superfine sugar
  • ½ teaspoon vanilla extract
  • cups strong hot espresso coffee
  • 2 tablespoons liqueur of choice optional – Kahlúa or Frangelico recommended
  • 6.5 oz 200g ladyfingers (savoiardi biscuits, about 24–30 pieces)
  • Cocoa powder for dusting

Instructions

  • Prepare the espresso: Brew strong espresso and pour it into a shallow dish. Stir in the liqueur (if using) and set aside to cool slightly.
  • Make the mascarpone cream: In a mixing bowl, beat the egg yolks and half the sugar together until pale and creamy. Add the mascarpone cheese and vanilla extract, then whisk until smooth and fully incorporated.
  • Whip the egg whites: In a separate clean bowl, beat the egg whites with the remaining sugar until stiff peaks form.
  • Combine the mixtures: Gently fold the whipped egg whites into the mascarpone mixture in two additions, being careful not to deflate the airy texture.
  • Assemble the tiramisu: Quickly dip each ladyfinger into the espresso (1 second per side) and arrange in a single layer at the bottom of your serving dish.
  • Spread half of the mascarpone cream evenly over the first layer of soaked biscuits.
  • Repeat with another layer of dipped ladyfingers, then top with the remaining mascarpone cream.
  • Smooth the top and refrigerate for at least 4–6 hours, or overnight for best results.
  • Before serving, dust generously with unsweetened cocoa powder using a fine sieve.

  • Do not over-soak the ladyfingers — a quick dip keeps them firm and prevents sogginess.
  • Chill overnight for the best flavor and texture.
