Servings: 8
- 4 ounces semi-sweet chocolate melted and slightly cooled
- 12 tablespoons unsalted butter softened
- 1 cup granulated sugar
- 3 large eggs room temperature
- 1½ teaspoons vanilla extract
- 1 baked 9-inch pie crust fully cooled
For topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Melt the chocolate gently until smooth, then let it cool slightly so it’s not hot when added to the mixture.
In a large bowl, beat the softened butter and sugar together until light, fluffy, and pale in color. This should take about 3–4 minutes.
Add the melted chocolate and vanilla extract, then mix until fully combined and smooth.
Add the eggs one at a time, beating on high speed for about 3 minutes after each addition. The mixture should become glossy and silky as you go.
Continue mixing until the filling is completely smooth with no grainy texture.
Spoon the chocolate filling into the baked pie crust and spread it evenly across the surface.
Place the pie in the refrigerator and chill for at least 2–3 hours until firm.
In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft to medium peaks form.
Spread or pipe the whipped cream over the chilled pie just before serving, then slice and enjoy.
Use good-quality chocolate for the best flavor. It really makes a difference in a simple recipe like this.
If you’re concerned about raw eggs, you can use pasteurized eggs for safety.
Make sure to beat each egg long enough. This step is what creates the smooth, silky texture.
The pie can be made a day ahead and kept refrigerated until ready to serve.
For extra flavor, top with chocolate shavings or a light dusting of cocoa powder.
Store leftovers in the fridge, covered, for up to 3 days.
