Ingredients

  • 3 pounds baby Dutch yellow potatoes halved
  • 3 tablespoons olive oil
  • 1/3 cup finely grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic powder
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
  • 2 tablespoons fresh parsley chopped

Instructions

Prep the Oven and Potatoes

  • Preheat oven to 400°F and line a baking sheet with parchment paper or foil.
  • Place halved potatoes directly on the baking sheet.

Season the Potatoes

  • Drizzle olive oil over the potatoes.
  • Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
  • Toss everything together until evenly coated.

Start Roasting

  • Spread potatoes into a single layer, cut side down when possible.
  • Bake for 5–10 minutes to begin cooking the potatoes.

Add Parmesan and Finish Baking

  • Remove the pan and sprinkle Parmesan cheese evenly over the potatoes.
  • Return to the oven and bake for another 25–30 minutes, until golden brown and fork-tender.

Garnish and Serve

  • Remove from oven and sprinkle with fresh parsley.
  • Serve warm for the best texture and flavor.
