Servings: 8
- 3 pounds baby Dutch yellow potatoes halved
- 3 tablespoons olive oil
- 1/3 cup finely grated Parmesan cheese
- 1 tablespoon Italian seasoning
- 2 teaspoons garlic powder
- 1 teaspoon salt or to taste
- 1 teaspoon black pepper or to taste
- 2 tablespoons fresh parsley chopped
Prep the Oven and Potatoes
Season the Potatoes
Drizzle olive oil over the potatoes.
Sprinkle with Italian seasoning, garlic powder, salt, and pepper.
Toss everything together until evenly coated.
Start Roasting
Spread potatoes into a single layer, cut side down when possible.
Bake for 5–10 minutes to begin cooking the potatoes.
Add Parmesan and Finish Baking
Remove the pan and sprinkle Parmesan cheese evenly over the potatoes.
Return to the oven and bake for another 25–30 minutes, until golden brown and fork-tender.
Extra crispiness: Roast cut-side down and avoid overcrowding the pan.
Cheese tip: Use finely grated Parmesan so it melts evenly and creates a better crust.
Herb variation: Add rosemary or thyme for a more robust herb flavor.
Make ahead: Parboil potatoes briefly before roasting if you want an even softer interior.
Storage: Store leftovers in the fridge and reheat in the oven to restore crispiness.
