Pizza Quesadillas
Pizza quesadillas combine the flavors of classic pizza with the crispy texture of a quesadilla. Filled with mozzarella cheese, pepperoni, and pizza sauce, they’re quick to make and perfect for lunch, dinner, or a fun snack.

- 8 flour tortillas
- 8 ounces shredded mozzarella cheese
- 6 ounces sliced pepperoni
- 1 16-ounce jar pizza sauce
- Butter for pan
Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer to a paper towel to drain.
Brush each tortilla with a thin layer of pizza sauce. Keep the layer very light to prevent sogginess.
Sprinkle mozzarella cheese over the sauce on one tortilla.
Add crispy pepperoni and any additional toppings if desired.
Sprinkle another layer of cheese on top and place a second tortilla on top, sauce side facing in.
Preheat a cast-iron skillet over medium heat and melt a small amount of butter.
Carefully place the quesadilla in the skillet. Cook for 3–5 minutes per side until golden brown and crispy, and the cheese is fully melted.
Remove from heat and slice into quarters.
Serve warm with a small bowl of heated pizza sauce for dipping.
