Pizza Quesadillas

Pizza quesadillas combine the flavors of classic pizza with the crispy texture of a quesadilla. Filled with mozzarella cheese, pepperoni, and pizza sauce, they’re quick to make and perfect for lunch, dinner, or a fun snack.

Ingredients

  • 8 flour tortillas
  • 8 ounces shredded mozzarella cheese
  • 6 ounces sliced pepperoni
  • 1 16-ounce jar pizza sauce
  • Butter for pan

Instructions

  • Heat a medium skillet over medium heat and fry the pepperoni until crisp. Transfer to a paper towel to drain.
  • Brush each tortilla with a thin layer of pizza sauce. Keep the layer very light to prevent sogginess.
  • Sprinkle mozzarella cheese over the sauce on one tortilla.
  • Add crispy pepperoni and any additional toppings if desired.
  • Sprinkle another layer of cheese on top and place a second tortilla on top, sauce side facing in.
  • Preheat a cast-iron skillet over medium heat and melt a small amount of butter.
  • Carefully place the quesadilla in the skillet. Cook for 3–5 minutes per side until golden brown and crispy, and the cheese is fully melted.
  • Remove from heat and slice into quarters.
  • Serve warm with a small bowl of heated pizza sauce for dipping.

  • Thin Sauce Layer: Prevents soggy tortillas.
  • Cook Pepperoni First: Adds crisp texture and reduces grease.
  • Use Medium Heat: Avoid burning the tortillas before cheese melts.
