Ingredients

  • 2 large carrots chopped
  • 1 large onion chopped
  • 4 potatoes peeled and chopped
  • 2 16 oz cans corn, drained (or frozen corn)
  • 2 16 oz cans creamed corn
  • 4 cups chicken broth or water
  • 1 package turkey bacon cooked and crumbled
  • 1/2 teaspoon thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 12 oz can evaporated milk
  • 2 tablespoons cornstarch
  • 3 tablespoons butter optional

Instructions

  • Add the carrots, onion, potatoes, corn, creamed corn, cooked turkey bacon, and seasonings to the slow cooker.
  • Pour in enough chicken broth or water to just cover the ingredients.
  • Cover and cook on high for 5 hours or low for 7–8 hours, until the vegetables are tender.
  • In a small bowl, whisk together the evaporated milk and cornstarch until smooth.
  • Stir the mixture into the slow cooker along with the butter.
  • Continue cooking for 30 minutes, stirring occasionally, until the chowder thickens.
  • Taste and adjust salt and pepper as needed.
  • Serve warm.

Notes

Cut vegetables evenly for consistent cooking.
Cook turkey bacon separately for better texture and flavor.
Add more broth if you prefer a thinner chowder.
Use half-and-half instead of evaporated milk for extra richness.
Mash a few potatoes to thicken the soup naturally.
Store leftovers in the fridge for up to 4 days.
