Ingredients
  

  • 4 slices sourdough or artisan bread
  • 1 cup fresh spinach chopped
  • ½ cup ricotta cheese
  • ½ cup shredded mozzarella cheese
  • 2 tbsp grated parmesan cheese
  • 1 clove garlic minced
  • ¼ tsp ground nutmeg
  • Salt and black pepper to taste
  • 2 tbsp butter for grilling

Instructions
 

  • Prepare the spinach mixture: In a skillet over medium heat, sauté the spinach with a small amount of olive oil until wilted, about 2 minutes. Add the minced garlic and cook for another 30 seconds. Remove from heat.
  • Make the ricotta filling: In a bowl, mix the ricotta, mozzarella, parmesan, nutmeg, salt, and black pepper. Stir in the sautéed spinach until well combined.
  • Assemble the sandwiches: Spread the ricotta-spinach mixture evenly over two slices of bread. Top each with another slice of bread to form sandwiches.
  • Grill the sandwiches: Heat a skillet over medium-low heat. Spread butter on the outer sides of each sandwich. Cook for 3-4 minutes per side, pressing down slightly, until golden brown and crispy, and the cheese inside is melted.
  • Serve and enjoy: Remove from heat, let cool for a minute, then slice in half and serve warm.
