Mini Nutella Stuffed Chocolate Chip Cookie Pies Recipe



Nutella Stuffed Chocolate Chip Cookie Pies – These mini pies are made with an all-butter pastry stuffed with Nutella and topped with soft, and chewy chocolate chip cookie!



YIELDS: 12 MINI PIES


INGREDIENTS


FOR THE PASTRY
1 cup plain/all-purpose flour 125g
1/4 cup cold unsalted butter 56g, cubed
1/4 cup icing/powdered sugar 30g
1 large egg yolk
1 teaspoon vanilla extract
1 – 2 teaspoons cold water


FOR THE COOKIE
1/2 cup unsalted butter 115g
1/2 cup caster/granulated sugar 100g
1/4 cup light brown sugar 50g
1 large egg
1 teaspoon vanilla extract
2 cups plain/all-purpose flour 250g
1 teaspoon baking powder
1 teaspoon cornflour/cornstarch
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips 175g
12 teaspoons Nutella


INSTRUCTIONS

  1. Place 12 teaspoons of Nutella onto a baking tray lined with parchment paper, and freeze until solid – about 1 hour.

  1. Sift the flour into a large bowl. Add the butter and, using your fingertips, rub into the flour until the mixture resembles fine breadcrumbs. Stir in the sugar.
