3 tbsp unsalted butter
1 tbsp olive oil
4 skinless boneless chicken breasts cut into bite sized pieces
1 tbsp All purpose flour
2 shallots about 1/4 cup, finely sliced
2/3 cup heavy cream
1/2 cup dry white wine
1/3 cup sun-dried tomatoes in oil drained and chopped
3 tbsp chopped fresh basil or 1 teaspoon dried
- Season chicken with salt and pepper.
- Dust chicken with flour, shake off excess flour.
- Melt butter with olive oil in heavy large skillet over medium-high heat.
