Lime and Vanilla Vegan Cheesecake Recipe


For the crust:
1 cup dates
1/3 cup sunflower seeds
1/3 cup pumpkin seeds
1/3 cup almonds
2 tbsp coconut oil melted if solid

For the filling:
500 g soft tofu drained
1/2 cup raw cashews soaked for at least 4 hours (longer is fine) and drained
1/3 cup fresh squeezed lime juice
1/2 cup coconut oil melted if solid
1/4 cup maple syrup
Vanilla – seeds scraped from 1 vanilla bean or 1 tsp vanilla paste, or 1 tsp natural vanilla extract
