INGREDIENTS:
Chocolate Mousse
300g dark eating chocolate – chopped
50g unsalted butter
3 eggs separated
55g caster sugar
300ml thickened cream
Chocolate Dirt
125g caster sugar
125g almond meal
75g plain flour
50g cocoa powder
60g unsalted butter
DIRECTIONS:
Chocolate Mousse
- Combine chocolate and butter in small saucepan
- Stir over low heat until smooth
- Remove from heat
- Stir in egg yolks, one at time
- Transfer mixture to large bowl.
Whip cream
- Whisk egg white until soft peak
- Add sugar and whisk until sugar dissolves
- Fold in cream into chocolate mixture then fold in egg white mixture in two batches.
- Divide between 8 cups
- Cover with cling film
- Refrigerate for 2 hours until set
Chocolate Dirt
- Pre-heat oven to 150C
- melt butter
- Line baking tray with grease paper
- Mix all dry ingredients in a bowl
- Add melted butter into dry ingredients
- Mix thoroughly until it represent ‘soil’- like look
- Bake for 10-15 minutes
- Cool before dividing into 8 cups above.
