Mint Chip Ice Cream Cups

Mint Chip Ice Cream Cups – Love ice cream cake but don’t have the time or energy to make one? We’ve got the solution! These super easy ice cream cups come together in no time at all, and they’re literally the perfect serving size. Try them with your favorite ice cream, or stick to our favorite—mint chip!


  • Cooking spray
  • 12 Oreos, crushed
  • 2 tbsp. butter, melted
  • Kosher salt
  • 1 pt. mint chocolate chip ice cream
  • 1 1/2 c. Cool whip or whipped cream
  • 3 tbsp. chocolate curls


  1. Line a 12-cup muffin tin with aluminum liners and spray liners with cooking spray.
  2. In a medium bowl, combine crushed cookies, melted butter, and a pinch of salt and stir until completely combined. Press cookie mixture into paper liners.
  3. Empty ice cream into a large bowl and stir with a spatula until softened. Use an ice cream scoop to fill each cupcake liner with ice cream. Freeze for 1 to 2 hours, or until solid.
  4. When frozen, remove cupcake liners and place on chilled serving dish. Pipe or dollop whipped cream onto the top of each “cupcake”, then sprinkle with chocolate curls and serve immediately.
