2 medium or large sweet potatoes
1½ tablespoons butter
1 shallot, minced
1 bag fresh baby spinach
¼ cup light sour cream or Greek yogurt
2 ounces light cream cheese
1 cup chickpeas
¼ cup shredded Mozzarella cheese
salt and pepper to taste
