Ingredients

  • 1/2 cup creamy peanut butter
  • 1 1/2 cups semi-sweet chocolate chips, divided
  • seas salt, optional
  • sprinkles (nonpareils), optional

Instructions

  1. Line a mini muffin pan with paper liners.
  2. Melt half the chocolate chips in the microwave in 30 second intervals until melted. You can also use a double boiler.
  3. Fill the bottom of each liner with the melted chocolate – just enough to cover it, about 1 teaspoon. Put the muffin pan into your fridge for 30 minutes or until chocolate is set.
  4. While the chocolate finishes cooling, melt the remaining chocolate chips and set aside.
  5. Take the muffin pan out of the fridge and place a dollop of peanut butter (about 1/2 teaspoon) in the center of each chocolate bottom; try to avoid touching the side of the liners.
  6. Spoon the melted chocolate over the peanut butter – enough to cover the top and fill the cracks. Top with sprinkles of your choice or sea salt.
