Ready in under 30 minutes!! Chicken broth, salsa, carrots, corn, onion, frozen cheese tortellini and evaporated milk. Very hearty soup. Great weeknight meal. Everyone loved this! We ate it for dinner and reheated for lunch the next day. Delicious!
4 cups chicken broth
1-1/2 cups salsa
1/2 cups carrots, peeled and sliced
2 cups cooked, chopped chicken
2 cups frozen corn
2 Tbsp dried minced onion flakes
1 (19oz) package frozen cheese tortellini
1 (5oz) can evaporated milk
- In a Dutch oven, combine broth, salsa and carrots. Bring to a boil; reduce heat to medium. Slowly boil for 5 minutes, until carrots are tender.
